Ingredients

Main Ingredients

  • 1 cup rolled oats (old-fashioned)
  • 1 ripe banana
  • 1 large egg
  • ½ cup milk (dairy or non-dairy)
  • 2 tbsp cocoa powder (natural, unsweetened)
  • 2 tbsp maple syrup or honey
  • ½ tsp baking powder
  • ½ tsp vanilla extract
  • Pinch of salt
  • 2 tbsp chocolate chips (optional, for extra brownie vibes)

Instructions

  1. Preheat & Prep: Preheat your oven to 350°F (175°C) and lightly grease a small baking dish or ramekin, about 12-ounce size. For easier cleanup, consider lining with parchment paper.
  2. Blend Ingredients: Add rolled oats, ripe banana, egg, milk, cocoa powder, maple syrup or honey, baking powder, vanilla extract, and salt to a blender. Blend on high for 30-45 seconds until the batter is completely smooth, thick, and pourable with no oat bits.
  3. Fold In Chocolate Chips: Pour the batter into a bowl and gently stir in chocolate chips, saving some to sprinkle on top if desired.
  4. Bake: Pour the batter into the prepared dish and bake in the oven for 20-25 minutes. The edges should be set and dry, and the center slightly soft and gooey with a gentle jiggle.
  5. Cool Slightly: Remove from the oven and let cool for at least 5 minutes to set and avoid burning your tongue. The baked oats will deflate slightly, enhancing their fudgy texture.
  6. Serve & Enjoy: Eat directly from the baking dish with a spoon or turn out onto a plate. Top with Greek yogurt, peanut butter, extra chocolate chips, or fresh berries to your liking.

Notes

  • Use old-fashioned rolled oats for the best texture; avoid quick oats or steel-cut oats.
  • The riper the banana, the sweeter and more flavorful the baked oats.
  • For a vegan version, substitute with a flax egg and plant-based milk.
  • If you prefer a cakier texture, bake for the full 25 minutes; for gooey center, aim closer to 20 minutes.
  • You can prep the batter the night before by blending wet and dry ingredients separately and mixing before baking.
  • If the center is too wet, bake in additional 3-5 minute increments until set.
  • Alternative sweeteners like coconut sugar or monk fruit can be used for lower glycemic options.
  • If no blender is available, use oat flour and whisk ingredients by hand for a slightly different but still tasty texture.
