Ingredients

Chicken and Seasonings

  • 1 ½ lb Springer Mountain Farms chicken breast
  • 1 ½ teaspoon paprika (OliveNation)
  • 1 ½ teaspoon oregano
  • 1 teaspoon garlic powder (OliveNation)
  • ½ teaspoon thyme
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoon olive oil (Costabile Brand)

Pasta

  • 12 oz gluten free farfalle pasta
  • ½ teaspoon salt (for pasta water)
  • ¼ cup reserved pasta water

Sauce

  • 4 tablespoon butter
  • 2 teaspoon dry shallots
  • 1 teaspoon garlic powder
  • 2 teaspoon Italian seasoning
  • ½ cup chicken broth
  • 2 tablespoon Gluten Free 1:1 Flour
  • 3 cups heavy cream
  • 12 oz shredded Parmesan cheese
  • ½ teaspoon salt

Instructions

  1. Cook Pasta: In a large pot, bring salted water to a boil and cook gluten-free farfalle pasta according to package instructions until al dente. Reserve ¼ cup of pasta water before draining.
  2. Prepare Chicken Seasoning: Combine paprika, oregano, garlic powder, thyme, salt, and black pepper in a small bowl to create the chicken seasoning mix.
  3. Season Chicken: Pound the chicken breasts slightly to even thickness. Season both sides thoroughly with the prepared seasoning mix.
  4. Sear Chicken: Heat olive oil in a large skillet over medium heat. Once hot, sear the chicken breasts for 5 minutes on each side until nicely browned.
  5. Cook Chicken Through: After searing, reduce heat to medium-low, cover the skillet with a lid, and cook for an additional 10-12 minutes, or until the internal temperature reaches 165°F. Remove chicken from skillet and set aside to rest on a cutting board.
  6. Make Sauce Base: Melt butter in the same skillet over medium-low heat. Add dry shallots, garlic powder, and Italian seasoning and simmer for 1 minute, stirring frequently.
  7. Thicken Sauce: Sprinkle gluten-free flour into the skillet and stir well, scraping the bottom to incorporate any browned bits.
  8. Add Liquids: Slowly whisk in chicken broth and heavy cream until a smooth and creamy sauce forms.
  9. Incorporate Cheese: Add shredded Parmesan cheese and stir until completely melted and sauce has thickened. Adjust salt if needed.
  10. Toss Pasta: Add cooked pasta to the sauce, tossing to coat evenly. Add reserved pasta water 1 tablespoon at a time to thin sauce to desired consistency.
  11. Slice Chicken & Combine: Slice rested chicken breasts and fold them gently into the pasta and sauce mixture.
  12. Serve: Stir well to combine all ingredients and serve immediately while warm and creamy.

Notes

  • Refrigerate leftovers in an airtight container for up to 3 days.
  • Reheat entire dish in a skillet over medium-low heat or microwave individual portions at 1-minute intervals.
  • If sauce is too thick, gradually add reserved pasta water 1-2 tablespoons at a time to loosen without making it runny.
  • Always salt pasta water before boiling to prevent sticking; you can rinse pasta with cold water after cooking if desired.
  • Lower heat before adding butter to prevent burning and maintain sauce flavor.
  • Remove chicken from heat as soon as it reaches 165°F internal temperature to retain moisture; slice after resting.
