Ingredients

Sauce Ingredients

  • 3 to 5 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon cornstarch (optional)

Main Ingredients

  • 1 pound ground chicken
  • 2 teaspoons vegetable oil, divided
  • 8 ounces white button or cremini mushrooms, finely chopped
  • Optional vegetables: finely diced onions, finely diced bell peppers, finely diced or grated carrots (amount to taste)
  • 1 (8-ounce) can water chestnuts, drained and finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon peeled and minced fresh ginger
  • 1/2 cup thinly sliced scallions (from about 6 scallions), divided
  • 2 small heads Bibb or butter lettuce

Serving Options

  • Red pepper flakes
  • Sriracha hot sauce

Instructions

  1. Prepare the Sauce: In a small bowl, combine hoisin sauce, soy sauce, rice vinegar, toasted sesame oil, and cornstarch if using. Mix well until smooth and set aside.
  2. Sauté Aromatics and Vegetables: Heat 1 teaspoon of vegetable oil in a large skillet over medium heat. Add the minced garlic, fresh ginger, and half of the sliced scallions, cooking until fragrant, about 1-2 minutes. Add the finely chopped mushrooms and optional vegetables such as onions, bell peppers, or carrots, and cook until they release their moisture and soften, about 4-5 minutes.
  3. Cook the Chicken: Push the vegetables to the side of the skillet, add the remaining teaspoon of oil, then add the ground chicken. Break it apart with a spatula and cook until no longer pink, about 5-6 minutes.
  4. Add Water Chestnuts and Sauce: Stir in the finely chopped water chestnuts, then pour the prepared sauce over the chicken mixture. Mix thoroughly to combine and let cook for another 2-3 minutes until the sauce slightly thickens and everything is well coated.
  5. Assemble the Wraps: Remove from heat, stir in the remaining sliced scallions. Separate Bibb or butter lettuce leaves, rinse and pat dry. Spoon a generous amount of the chicken mixture into each lettuce leaf.
  6. Serve: Serve the lettuce wraps immediately with optional toppings like red pepper flakes or sriracha hot sauce for added heat.

Notes

  • You can adjust the hoisin sauce quantity based on your desired sweetness level.
  • Cornstarch is optional but helps achieve a thicker sauce consistency.
  • Make sure to dry the lettuce leaves well to prevent sogginess.
  • This recipe works well with ground turkey or pork as alternatives.
  • For extra crunch, add toasted chopped peanuts as a garnish.
