Ingredients

Chocolate Mixture

  • 200g dark baking chocolate (70% minimum)
  • 250g smooth and creamy white cheese (20% fat)

Batter

  • 3 eggs at room temperature
  • 100g white sugar
  • 40g flour

Decoration

  • Chocolate chips or icing sugar (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 180°C using the fan-assisted mode to ensure even baking.
  2. Melt Chocolate: Melt the dark chocolate using a double boiler or microwave in 30-second intervals, stirring until smooth. Allow it to cool slightly to prevent curdling when mixed with cheese.
  3. Prepare Cheese: Remove the white cheese from the refrigerator so it reaches room temperature, ensuring smooth mixing.
  4. Combine Chocolate and Cheese: In a large bowl, gently mix the cooled melted chocolate with the room temperature white cheese until fully incorporated.
  5. Add Eggs: Incorporate the eggs one at a time, whisking vigorously after each addition to create a smooth, airy batter.
  6. Mix in Sugar: Add the white sugar and mix well until the batter is smooth.
  7. Add Flour: Sift the flour directly onto the mixture and gently fold it in to avoid deflating the batter.
  8. Prepare Baking Mold: Grease and flour a 20-22 cm round mold to prevent sticking, then pour the batter into it.
  9. Decorate: Sprinkle chocolate chips on top if desired, or lightly dust with icing sugar after baking for an elegant finish.
  10. Bake: Bake in the preheated oven for exactly 25 minutes; the cake should be set yet soft.
  11. Cool and Serve: Allow the cheesecake to cool completely in the mold before unmolding to retain its delicate texture and shape.

Notes

  • Using fromage blanc or a smooth white cheese with 20% fat helps achieve a creamy, soft texture without the heaviness of butter.
  • Do not overbake the cheesecake; it should remain slightly soft in the middle after baking for the best melt-in-your-mouth experience.
  • Ensure all ingredients, especially eggs and cheese, are at room temperature for smooth mixing and uniform batter texture.
  • Chocolate chips on top add a nice texture contrast but are optional.
  • This recipe uses a fan-assisted oven setting for even baking; adjust time slightly if using a conventional oven.
