Ingredients

Proteins

  • 6–8 bone-in skin-on chicken thighs (about 2.25 pounds)

Vegetables

  • 1 pound gold or russet potatoes, cut into chunks

Marinade

  • ¼ cup plain whole milk yogurt
  • 3 tablespoons olive oil
  • 1 tablespoon minced garlic, or to taste
  • 1 tablespoon yellow mustard
  • 1 tablespoon lemon juice
  • 2 teaspoons salt
  • 2 teaspoons dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C) to ensure it is ready to cook the chicken and potatoes evenly.
  2. Arrange chicken and potatoes: Place the chicken thighs in the center of a large sheet pan. Scatter the potato chunks around the chicken in an even layer to roast uniformly.
  3. Pierce chicken thighs: Using a small knife, carefully pierce the chicken thighs a few times to help the marinade penetrate deeply for better flavor infusion.
  4. Make marinade: In a bowl, whisk together olive oil, yogurt, salt, onion powder, black pepper, garlic, oregano, mustard, lemon juice, and thyme until fully combined.
  5. Marinate chicken and potatoes: Pour the marinade evenly over the chicken and potato pieces. Use clean hands to massage and rub the marinade all over the chicken and potatoes, including underneath the chicken skin for thorough seasoning.
  6. Rearrange potatoes: Spread the potatoes back into a single layer around the chicken so that they roast evenly during cooking.
  7. Bake: Bake the chicken and potatoes in the preheated oven for 50 to 55 minutes until the potatoes are tender, chicken is fully cooked, and the skin is golden and crisp.
  8. Optional broil: If desired, broil for an additional 2 to 3 minutes to deepen the chicken skin color for extra crispiness and appearance.
  9. Rest and serve: Let the chicken rest briefly once out of the oven, then serve warm for a delicious, hearty meal.

Notes

  • You can use either gold or russet potatoes based on your preference; both work well for roasting.
  • For extra flavor, allow the chicken and potatoes to marinate for up to 1 hour before roasting if time permits.
  • If you don’t have yellow mustard, Dijon mustard can be a suitable substitute.
  • Use bone-in, skin-on chicken thighs to keep the meat juicy and flavorful during roasting.
  • Adjust garlic amount to your taste preference for mild or stronger garlic flavor.
