Ingredients

Wrap

  • 1 wrap Joseph’s lavash wrap or large burrito soft yet sturdy base

Filling

  • ½ teaspoon oil from sun-dried tomatoes (adds richness for the filling)
  • 1 cup fresh spinach, chopped
  • 2 tablespoon sun-dried tomatoes in oil, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Pinch salt and pepper to taste
  • ½ cup egg whites (about 120 grams)
  • 3 tablespoon shredded mozzarella (freshly shredded recommended)
  • 2 tablespoon crumbled feta cheese

Instructions

  1. Prepare the filling: Heat a skillet over medium heat and add the oil from the sun-dried tomatoes. Add the chopped spinach and sauté until wilted, about 2 minutes. Stir in the chopped sun-dried tomatoes, garlic powder, Italian seasoning, and a pinch of salt and pepper. Cook for another minute to combine the flavors.
  2. Cook the egg whites: Pour the egg whites into the skillet with the spinach mixture. Stir gently and cook until the eggs are fully set and cooked through, about 3-4 minutes. Remove from heat once done.
  3. Add the cheeses: Sprinkle the shredded mozzarella and crumbled feta over the egg and spinach mixture. Stir gently until the cheeses are slightly melted and well combined with the eggs and veggies.
  4. Assemble the wrap: Lay out the lavash or burrito wrap on a baking sheet lined with parchment paper. Spoon the warm filling evenly down the center of the wrap.
  5. Roll the wrap: Fold in the sides of the wrap and then roll tightly from the bottom to create a secure wrap.
  6. Optional warming: If desired, you can warm the assembled wrap in the skillet or oven for 1-2 minutes per side to crisp the exterior slightly and integrate flavors more deeply.
  7. Serve: Slice the wrap in half if preferred, and serve immediately while warm for a hearty, protein-packed breakfast.

Notes

  • Use freshly shredded mozzarella for more melty cheesiness.
  • You can substitute the lavash wrap with a large whole wheat tortilla if preferred.
  • For added protein, double the egg whites or include a lean meat like turkey sausage.
  • Adjust the seasoning to your taste, adding a pinch of crushed red pepper for a spicy kick.
  • This wrap is best eaten fresh but can be wrapped in foil and refrigerated for up to 24 hours.
