Ingredients

Seafood Boil Ingredients

  • 2 gallons water
  • 2 quarts chicken broth
  • 1 large onion, cut in wedges
  • 8 garlic cloves, whole and peeled
  • ½ cup sugar
  • ¼ cup Old Bay Seasoning
  • 1 tablespoon paprika
  • 1 tablespoon salt
  • 2 lemons, halved (plus more for garnish if desired)
  • 4 pounds small potatoes, red and yellow
  • 24 ounces smoked sausage, sliced
  • 6 corn cobs, halved
  • 1 pound shrimp, raw, peeled, with tail on
  • 4 Dungeness crab sections, cooked

Seasoned Butter Sauce

  • 1 cup butter (2 sticks)
  • 1 lemon, juiced
  • 4 garlic cloves, crushed
  • 1 teaspoon Old Bay seafood seasoning
  • Hot sauce, optional, a few dashes or to taste
  • Parsley, for garnish

Instructions

  1. Prepare the Boil Base: In a large stockpot, combine 2 gallons water and 2 quarts chicken broth. Add the onion wedges, whole peeled garlic cloves, sugar, Old Bay Seasoning, paprika, salt, and halved lemons. Bring this mixture to a vigorous boil to develop a flavorful broth.
  2. Cook the Potatoes and Sausage: Add the small red and yellow potatoes and smoked sausage slices to the boiling broth. Simmer for about 15 minutes or until the potatoes begin to soften but are not fully cooked.
  3. Add Corn and Shrimp: Next, add the halved corn cobs and raw peeled shrimp with tails on to the pot. Continue boiling for an additional 7-8 minutes, until the shrimp turns pink and the corn is tender.
  4. Incorporate Crab: Lastly, add the cooked Dungeness crab sections to the pot just to warm them through. Simmer for about 5 more minutes to heat crab without overcooking.
  5. Prepare Seasoned Butter Sauce: While the boil cooks, melt the butter in a small saucepan over low heat. Stir in the freshly squeezed lemon juice, crushed garlic cloves, Old Bay seasoning, and hot sauce if using. Keep warm until serving.
  6. Drain and Serve: Carefully drain the seafood boil mixture and transfer everything onto a large serving platter or sheet pan. Drizzle the warm seasoned butter sauce generously over the top.
  7. Garnish and Enjoy: Sprinkle chopped parsley over the dish and serve with additional lemon wedges for squeezing. Enjoy this fun, communal seafood feast fresh and hot!

Notes

  • Use cooked crab to avoid overcooking during the boil process.
  • Adjust Old Bay seasoning and paprika to taste for spiciness and smokiness.
  • Serve with crusty bread or hush puppies to soak up the flavorful butter sauce.
  • Make sure not to overcook shrimp; it should turn pink and firm but remain tender.
  • Customize with additional seafood like clams or mussels if desired.
  • The seasoned butter sauce can be made ahead and reheated gently before serving.
