Ingredients

Main Ingredients

  • 6 Thomas’ Limited Edition Cranberry Bagels, or English Muffins, opened
  • 6 slices thinly sliced deli ham, or more as desired (you can also use any breakfast meat you prefer: bacon, sausage, turkey bacon, etc.)
  • ⅓ cup whipped chive cream cheese
  • 4 slices provolone cheese
  • 1 cup shredded Colby Jack cheese
  • 4 large eggs, beaten with 3 tablespoons milk or heavy cream (can substitute egg whites if desired)
  • 2 tablespoons melted butter, for brushing tops

Instructions

  1. Preheat Oven and Prepare Baking Dish: Preheat your oven to 350°F and spray the bottom of a baking dish with nonstick cooking spray to prevent sticking and for easy cleanup.
  2. Assemble Bagel Bottoms: Place the bottom halves of the Thomas’ Cranberry Bagels in the dish, fitting them close together without gaps. Set the tops aside for later use.
  3. Apply Cream Cheese and Cheeses: Spread the whipped chive cream cheese evenly over each bagel bottom. Then layer the provolone slices on top, followed by sprinkling the shredded Colby Jack cheese evenly over the surface.
  4. Partially Bake Cheese Layer: Bake the assembled bagel bottoms with cheeses for about 5 minutes, or until the cheese just begins to melt. Remove from the oven at this point.
  5. Add Ham and Egg Mixture: Evenly distribute the thinly sliced deli ham over the melted cheese layer. In a medium bowl, whisk together the eggs and milk or heavy cream, then pour this mixture evenly over the bagels and ham, allowing it to soak in slightly.
  6. Top Bagels and Brush with Butter: Place the reserved bagel tops back onto the dish, covering the egg and ham mixture. Brush the tops with melted butter to enhance browning and flavor as they bake.
  7. Bake Until Set and Golden: Return the dish to the oven and bake for 15 minutes, or until the eggs are fully set and the bagel tops are golden brown and crisp.
  8. Serve Warm: Slice the bake into portions and serve warm for a festive and satisfying breakfast experience.
  9. Pro Tip: For convenience, assemble this breakfast bake the night before, refrigerate overnight, and simply bake it fresh in the morning to enjoy a warm, effortless meal.
