Ingredients

Potatoes

  • 1 lb. white potatoes
  • ½ teaspoon sea salt (for boiling water)

Creamy Garlic Sauce

  • 3 cloves garlic, chopped
  • 1 tablespoon butter
  • ½ cup heavy cream
  • Salt and pepper, to taste
  • 2 tablespoons parsley, chopped (optional)

Instructions

  1. Cook potatoes: Start by bringing a medium saucepan of water to a boil and add ½ teaspoon of sea salt. Cut the white potatoes into quarters without peeling them. Add the potato pieces to the boiling salted water and cook for 15 to 20 minutes until they are fork-tender. Once done, drain and set the potatoes aside.
  2. Prepare garlic sauce: While the potatoes are boiling, finely chop the garlic cloves. In the now-empty saucepan, melt 1 tablespoon of butter over medium heat. Add the chopped garlic and cook for about 3 minutes until the garlic becomes golden and fragrant but not burnt.
  3. Simmer cream and garlic: Pour in ½ cup of heavy cream and reduce the heat to low. Let the cream and garlic mixture simmer gently for about 5 minutes to develop the flavors and slightly thicken the sauce.
  4. Combine potatoes and sauce: Add the drained potatoes back into the saucepan with the creamy garlic sauce. Season with salt and pepper to taste. Stir gently to coat the potatoes thoroughly with the sauce.
  5. Finish and serve: Sprinkle the chopped parsley over the potatoes if using, mix well, and serve immediately as a delicious, creamy side dish.

Notes

  • Peeling the potatoes is optional; leaving the skin adds texture and nutrients.
  • Use fresh garlic for the best flavor; avoid pre-minced garlic for this recipe.
  • For a lighter option, substitute half-and-half or milk for heavy cream, though the sauce will be less rich.
  • Add grated Parmesan cheese for an extra savory kick if desired.
  • Ensure not to overcook garlic as it can become bitter if burnt.
