Ingredients

Meat and Vegetables

  • 12 oz Italian Sausage
  • 1/2 cup onion, finely chopped
  • 3 cloves garlic, minced
  • 1-2 cups fresh spinach, roughly chopped

Tomato Sauce

  • 15 oz seasoned diced tomatoes
  • 8 oz tomato sauce
  • 1/2 cup heavy cream
  • 2 teaspoons Italian seasoning

Pasta and Cheese

  • 18 oz frozen ravioli
  • 1/4 cup Parmesan Cheese, grated

Instructions

  1. Cook sausage and onions: Heat a large skillet over high heat. Add the Italian sausage and finely chopped onions. Cook for about 5 minutes, breaking up the sausage with a spoon, until the sausage is no longer pink and the onions have softened. Drain any excess grease from the pan.
  2. Sauté garlic: Add the minced garlic to the skillet and cook for about one minute, until fragrant.
  3. Add sauce ingredients and ravioli: Stir in the seasoned diced tomatoes, tomato sauce, heavy cream, and Italian seasoning until well combined. Add the frozen ravioli and gently stir to coat the pasta with the sauce. Bring the mixture to a simmer. Cover the skillet and let it simmer for 5-7 minutes, or until the ravioli is cooked through.
  4. Finish with cheese and spinach: Stir in the grated Parmesan cheese and roughly chopped fresh spinach. Continue cooking for 2-3 minutes until the spinach is wilted and the cheese is melted, then serve immediately.

Notes

  • You can use mild or spicy Italian sausage depending on your spice preference.
  • If fresh spinach is not available, frozen spinach can be used; just make sure to thaw and drain it well.
  • For a lighter version, substitute heavy cream with half-and-half or a dairy-free cream alternative.
  • Make sure to stir gently when adding ravioli to avoid tearing the pasta.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated on the stovetop or microwave.
