Ingredients

Cake Ingredients

  • 1 cup All-purpose flour
  • 1/2 cup Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/2 cup Buttermilk

Raspberry Mousse Ingredients

  • 1 cup Fresh raspberries, plus extra for garnish
  • 1/4 cup Granulated sugar
  • 1 cup Heavy cream
  • 1 teaspoon Vanilla extract
  • 4 ounces Dark chocolate, melted and cooled

Chocolate Ganache Ingredients

  • 4 ounces Dark chocolate, chopped
  • 1/2 cup Heavy cream

Instructions

  1. Prepare the cake batter: Preheat the oven to 350°F (175°C) and grease and flour an 8-inch round cake pan. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  2. Cream butter and sugar: In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy, about 3 to 5 minutes.
  3. Add eggs and vanilla: Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. Combine dry and wet ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined without overmixing.
  5. Bake the cake: Pour the batter into the prepared cake pan and smooth the top. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool the cake: Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  7. Make the raspberry mousse: Puree raspberries with sugar in a blender, then strain through a fine-mesh sieve to remove seeds. In a chilled bowl, whip heavy cream and vanilla extract until soft peaks form. Gently fold in the melted dark chocolate and raspberry puree until smooth and combined.
  8. Chill the mousse: Refrigerate the mousse for about 30 minutes to allow it to set slightly.
  9. Assemble the cake: Once the cake is completely cooled, slice it horizontally into two even layers. Place the bottom layer on a serving plate, spread half of the raspberry mousse evenly over it, then place the second layer on top and spread the remaining mousse.
  10. Chill the assembled cake: Refrigerate the cake for at least 1 hour to allow the mousse to set firmly.
  11. Prepare the ganache: Heat the heavy cream in a small saucepan just until it begins to boil. Pour the hot cream over the chopped dark chocolate in a bowl. Let it sit for a few minutes to soften the chocolate, then stir gently until smooth and glossy.
  12. Finish and serve: Drizzle the ganache over the chilled cake. Garnish with fresh raspberries if desired. Serve chilled for best flavor and texture.

Notes

  • Ensure the butter is softened but not melted for optimal cake texture.
  • Be gentle when folding the chocolate and raspberry puree into whipped cream to maintain airiness.
  • Straining the raspberry puree removes seeds, resulting in a smooth mousse.
  • The mousse needs refrigeration to set properly before assembling the cake.
  • Chill the assembled cake well for clean slicing and best flavor combination.
  • Use good-quality dark chocolate for both mousse and ganache for the richest taste.
  • Fresh raspberries make a beautiful garnish and complement the mousse flavor.
