Ingredients

Eggs & Butter

  • 2 large eggs
  • 3 tablespoons butter, divided

Vegetables & Rice

  • 1 cup frozen peas and carrots (no need to thaw)
  • 3 cups cold cooked white rice
  • 1/3 cup chopped scallions

Sauces & Seasonings

  • 1 tablespoon soy sauce, plus more for serving
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon toasted sesame oil
  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Whisk the eggs: In a medium bowl, whisk the eggs thoroughly until smooth and well combined to prepare for scrambling.
  2. Cook the vegetables: Heat 2 tablespoons of butter in a large skillet over medium-high heat. Once melted and hot, add the frozen peas and carrots, cooking for 2-3 minutes until the water evaporates and the vegetables are tender.
  3. Add rice and sauces: Stir in the cold cooked rice, soy sauce, oyster sauce, toasted sesame oil, and minced garlic. Cook for 2 minutes, stirring occasionally to combine and heat through.
  4. Scramble the eggs: Push the rice mixture to one side of the pan. Add the remaining 1 tablespoon of butter to the empty side. Once melted, pour in the whisked eggs and stir continuously until scrambled and fully cooked, about 1 minute.
  5. Combine and season: Add the chopped scallions and stir everything together to combine. Remove the skillet from heat, season with salt and pepper to taste, and serve with extra soy sauce if desired.

Notes

  • For best texture, use rice that has been cooked and chilled, preferably refrigerated overnight.
  • Frozen peas and carrots can be added directly without thawing to save time and prevent sogginess.
  • Adjust the soy sauce and oyster sauce quantities to taste for preferred saltiness and umami intensity.
  • Use a large skillet or cast iron pan for even cooking and to prevent overcrowding.
