Ingredients

Main Ingredients

  • 1 pound Italian sausage
  • 1/2 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups beef broth
  • 1 cup water
  • 1/4 teaspoon Italian seasoning
  • 10 uncooked lasagna noodles, broken into smaller pieces
  • 1-2 tablespoons torn fresh basil
  • Salt & pepper to taste

Toppings

  • Ricotta cheese
  • Grated parmesan cheese
  • Shredded mozzarella cheese

Instructions

  1. Brown the Sausage: Add the Italian sausage meat (removed from casings if whole) to a large soup pot over medium-high heat. Cook for about 5 minutes, breaking up the sausage with a spoon as it browns. If there's excess fat, carefully drain it from the pot.
  2. Sauté Onion and Garlic: Add the chopped onion and minced garlic to the pot with the sausage. Continue cooking for 4-5 minutes until the onion is softened and fragrant.
  3. Add Liquids and Noodles: Stir in the crushed tomatoes, beef broth, water, Italian seasoning, and broken lasagna noodles. Increase heat to high and bring the soup to a boil.
  4. Simmer the Soup: Reduce the heat to maintain a gentle boil, cover the pot with the lid slightly ajar, and let it simmer for about 15 minutes or until the noodles are tender. Stir occasionally to prevent the noodles from sticking to the bottom.
  5. Prep Toppings: While the soup simmers, prepare the toppings by tearing fresh basil and gathering ricotta, grated parmesan, and shredded mozzarella cheeses.
  6. Season and Serve: Stir the torn fresh basil into the soup and season with salt and pepper to taste. Ladle the soup into bowls and garnish each serving with a dollop of ricotta and a generous sprinkle of mozzarella and parmesan cheese. Enjoy hot!

Notes

  • For a spicier kick, use spicy Italian sausage or add red pepper flakes.
  • Feel free to substitute beef broth with chicken or vegetable broth for a different flavor profile.
  • If you prefer a meatless version, substitute sausage with plant-based sausage or extra vegetables.
  • To save time, pre-chopped onions and minced garlic from the store can be used.
  • Use gluten-free lasagna noodles to make the recipe gluten-free.
  • Leftovers keep well in the refrigerator for up to 3 days and reheat beautifully.
