Ingredients

Egg Mixture

  • 12 eggs
  • 3 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon 7 spice blend
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh cilantro, finely chopped
  • 4 green onions, minced
  • 2 tablespoons fresh mint, finely chopped

Cooking Oil

  • 8 teaspoons olive oil, divided

Instructions

  1. Prepare the egg mixture: In a large bowl, whisk together the eggs, all-purpose flour, baking powder, 7 spice blend, salt, and black pepper until the mixture is smooth and well combined. Gently fold in the chopped cilantro, minced green onions, and fresh mint to evenly distribute the herbs throughout the batter.
  2. Heat the skillet: Place an 8-inch non-stick skillet over medium heat and add 1 teaspoon of olive oil. Allow the oil to warm fully to prevent sticking and ensure even cooking.
  3. Cook the omelette portions: Measure ½ cup of the prepared omelette mixture and pour it into the heated skillet, spreading it evenly. Cook until the edges and bottom set and turn golden brown, about 2 to 3 minutes. Carefully flip the omelette using a spatula and cook the other side for an additional 2 to 3 minutes until fully cooked and lightly browned.
  4. Fold and serve: Gently slide a spatula under the cooked omelette, fold it in half, and transfer it to a serving platter. Repeat the process with the remaining egg mixture and olive oil until all eight omelettes are cooked.
  5. Serve: Serve the Ejjeh immediately, on its own or accompanied by plain yogurt and warm pita bread for a traditional Lebanese touch.

Notes

  • Storage: Best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 3 days.
  • Tip: Ensure the skillet is properly preheated before adding the egg mixture to prevent burning on the outside while keeping the inside undercooked.
  • Use fresh herbs for a more vibrant and fresh flavor.
  • 7 spice blend brings authentic Middle Eastern flavor; substitute with a mix of ground cinnamon, allspice, nutmeg, cloves, and black pepper if unavailable.
