Ingredients

Chicken and Seasoning

  • 1 1⁄2 lbs boneless, skinless chicken thighs or breast, cut into bite-sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1⁄2 teaspoon black pepper

Cooking Ingredients

  • 4 tablespoons unsalted butter, divided
  • 3 cloves garlic, minced
  • 1⁄4 cup freshly grated Parmesan cheese, plus more for serving
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Season the Chicken: In a large bowl, evenly season the chicken pieces with garlic powder, salt, and black pepper. Toss well to ensure every piece is coated.
  2. Cook the First Half of Chicken: Heat 2 tablespoons of butter in a large skillet over medium heat. Add half of the chicken in a single layer and cook undisturbed for about 4 minutes until golden brown and easily released from the pan. Flip and cook for another 2 minutes or until fully cooked. Transfer cooked chicken to a plate.
  3. Cook the Remaining Chicken: Melt 1 more tablespoon of butter in the skillet. Add the remaining chicken pieces and cook them in the same manner until golden and cooked through. Transfer to the plate with the first batch.
  4. Prepare Garlic Butter: Reduce the skillet heat to low and add the remaining tablespoon of butter. Once melted, add the minced garlic and cook for about 1 minute, stirring frequently, until fragrant but not browned.
  5. Toss Chicken in Garlic Butter: Return all the cooked chicken along with any juices on the plate back to the skillet. Toss well to coat the chicken evenly in the buttery garlic sauce.
  6. Add Parmesan and Garnish: Remove the skillet from heat and stir in the freshly grated Parmesan cheese until the chicken is well coated. Sprinkle with chopped fresh parsley and additional Parmesan cheese to taste.
  7. Serve: Serve the garlic Parmesan chicken bites warm alongside your favorite sides like rice, pasta, or a fresh green salad. Enjoy!

Notes

  • For extra crispiness, pat the chicken dry before seasoning.
  • You can substitute chicken thighs with chicken breast if preferred, but thighs stay juicier.
  • Freshly grated Parmesan provides the best flavor compared to pre-grated options.
  • If you want a lower sodium option, reduce the salt amount or use low-sodium butter.
  • Leftovers can be refrigerated for up to 3 days and reheated gently in a skillet.
