Ingredients

Preferment (made 10 to 12 hours before mixing final dough)

  • 4 grams salt
  • 195 grams luke warm filtered water
  • 90 grams dark rye flour (100% whole grain)
  • 100 grams all-purpose flour (white wheat flour)
  • 40 grams sourdough starter (rye or wheat)

Sponge (made 30 minutes before mixing final dough)

  • 200 grams luke warm filtered water
  • 260 grams all-purpose flour (white wheat flour)

Main Dough

  • 70 grams luke warm filtered water
  • 9 grams salt
  • 175 grams dark rye flour (100% whole grain)
  • 3 grams active dry yeast (½ pouch)

Zwiebelbrot (Onion Bread) - Optional

  • 1 large yellow onion
  • 14 grams butter

Instructions

  1. Make Preferment: In a medium bowl, combine salt, water, dark rye flour, all-purpose flour, and sourdough starter using a rubber spatula or spoon. Cover airtight and let rest at room temperature for 10 to 12 hours to develop flavor and fermentation.
  2. Make Sponge: In a small bowl, mix water and all-purpose flour by hand until smooth dough forms. Cover airtight and let rest at room temperature for 30 minutes to allow gluten development.
  3. Prepare Onion (if making Zwiebelbrot): Peel and slice the onion. Cook it in butter over medium-low heat, stirring occasionally, for 10 to 15 minutes until golden brown and most moisture evaporates. This adds a savory depth to the bread.
  4. Make Main Dough: Without premixing, add water, salt, dark rye flour, and active dry yeast directly to the preferment and sponge. Optionally add the cooled sautéed onion. Knead by hand or with a mixer dough hook for about 5 minutes until smooth, homogenous, and barely sticky dough is formed.
  5. Bulk Fermentation: Cover the dough airtight and let it rest at room temperature for 1 hour until it increases in size by about half, allowing fermentation and flavor development.
  6. Shape Dough: Shape the dough into a round or long form, folding edges toward the center and pressing down to create tension. Place the shaped dough seam side down into a proofing basket dusted with white flour. Cover with a linen towel or basket liner for the final rise.
  7. Proofing: Let the dough proof at room temperature for 45 minutes until slightly puffed up, preparing it for baking.
  8. Preheat Oven: Preheat oven to 250°C (480°F). Place a casserole dish filled with hot water at the bottom to create steam, which helps develop a crispy crust.
  9. Prepare for Baking: Place a parchment-lined baking sheet ready. Carefully turn the dough out of the basket onto the parchment, seam side up. Check the water in the casserole dish to maintain steam.
  10. Bake Bread: Transfer dough quickly to the oven and bake for 60 minutes total. After 10 minutes reduce the temperature to 220°C (430°F) and continue baking to get a crusty, well-developed loaf.

Notes

  • For Dutch Oven Baking: Preheat Dutch oven with lid on. Do not add water for steam. Place scored dough on parchment paper inside the Dutch oven, cover with lid, bake at 250°C (480°F) for 10 minutes, then reduce to 220°C (430°F) for 40 minutes. Remove lid and bake an additional 10 minutes to brown the crust.
  • Sauté onions well until golden brown to ensure moisture is cooked out, preventing dough inconsistency.
  • Scoring the loaf is optional; it directs cracking but is not necessary for this recipe.
  • This recipe is beginner-friendly and allows time-flexible sourdough baking with a long resting period for best flavor.
  • Use 100% whole grain dark rye flour for authentic German rye flavor.
