Ingredients

Potatoes

  • 2 pounds Yukon gold potatoes (quartered)

Marinade and Seasoning

  • 3 tablespoons olive oil
  • Zest of 1 lemon
  • Juice from 1 lemon
  • 1 tablespoon dried oregano
  • Salt and pepper (to taste)
  • 1 whole lemon (cut into slices)

Herb Olive Oil and Garnish

  • 2 tablespoons olive oil
  • ½ cup chopped fresh herbs (Greek basil, oregano, parsley & thyme)
  • ¼ cup feta cheese (crumbled)
  • Additional crumbled feta for serving

Instructions

  1. Preheat Oven: Preheat your oven to 400ºF (200ºC) to ensure it reaches the ideal temperature for roasting the potatoes evenly, helping achieve a crispy outside and tender inside.
  2. Prepare Potatoes: Cut the Yukon gold potatoes into quarters to allow them to roast thoroughly. In a mixing bowl, combine 3 tablespoons olive oil, lemon zest, lemon juice, and dried oregano. Toss the potatoes in this mixture to coat them evenly and season generously with salt and pepper.
  3. Add Lemon Slices: Incorporate the sliced whole lemon halves into the bowl with the seasoned potatoes, mixing gently without squeezing the lemon. This adds a subtle burst of citrus aroma during roasting.
  4. Roast Potatoes: Spread the potatoes and lemon slices evenly on a baking sheet. Roast in the preheated oven for about 30 to 40 minutes until the potatoes are golden brown and tender inside, turning occasionally for even cooking.
  5. Prepare Herb Olive Oil: While the potatoes roast, chop the fresh herbs finely and mix them with the remaining 2 tablespoons of olive oil in a bowl. Add the crumbled feta cheese to this mixture, allowing the flavors to meld while waiting for the potatoes.
  6. Finish and Serve: Once the potatoes are done roasting, transfer them to a serving dish. Drizzle the herb olive oil over the hot potatoes, then sprinkle with additional crumbled feta cheese before serving to enhance flavor and presentation.

Notes

  • Yukon gold potatoes are preferred for their creamy texture and ability to crisp nicely, but red potatoes can be used as a substitute.
  • Do not squeeze the lemon slices into the potatoes during roasting to avoid overpowering bitterness; their purpose is to infuse aroma.
  • For a dairy-free version, omit feta or substitute with a plant-based cheese alternative.
  • Fresh herbs such as Greek basil, oregano, parsley, and thyme provide authentic flavor; dried herbs won't offer the same freshness.
  • Serve this dish warm as a side to grilled meats, seafood, or alongside a fresh salad for a complete Mediterranean meal.
