Ingredients

Mango Filling

  • 1 cup fresh ripe mango puree
  • 2 tablespoons sugar
  • 1 tablespoon cornstarch

Mochi Dough

  • 1 cup glutinous rice flour (Mochiko)
  • 1/4 cup sugar
  • 3/4 cup water
  • (optional) food coloring

Finishing

  • 1/2 cup cornstarch or potato starch, for dusting
  • (optional) extra mango puree or small mango chunks, for filling

Instructions

  1. Prepare the Mango Puree: Puree ripe mangoes until smooth and strain through a fine mesh sieve to remove fibers, ensuring a silky filling.
  2. Cook the Mango Filling: In a small saucepan, combine the mango puree, sugar, and cornstarch. Cook over medium heat, stirring constantly until the mixture thickens into a paste. Allow to cool, then form into teaspoon-sized balls and freeze for 30 minutes to make assembly easier.
  3. Mix the Mochi Dough: In a microwave-safe bowl, thoroughly mix glutinous rice flour, sugar, and water until smooth. Add food coloring if desired to enhance appearance.
  4. Cook the Mochi Dough: Cover the bowl and microwave the mixture for 2 to 3 minutes, stirring halfway through, until the dough becomes sticky and translucent, indicating it is fully cooked.
  5. Prepare Work Surface: Dust a clean surface generously with starch to prevent sticking. Transfer the hot mochi dough onto it and flatten to about 1/4-inch thickness using a spatula or rolling pin.
  6. Shape the Mochi: Cut the flattened dough into circles or squares. Place a frozen mango filling ball in the center of each piece. Carefully stretch the dough around and seal it to encase the filling completely.
  7. Finish Mochi: Lightly dust the finished mochi with additional starch to prevent sticking and ensure easy handling.
  8. Chill Before Serving: Refrigerate the mango mochi for 10 to 15 minutes to firm up before serving for the best texture and flavor.

Notes

  • Use only glutinous rice flour (Mochiko) to achieve the characteristically chewy mochi texture; regular rice flour will not work properly.
  • Freeze the mango filling before assembly to make wrapping the mochi easier and neater.
  • Generously dust work surfaces and your hands with starch to prevent the sticky mochi dough from adhering during shaping.
