Ingredients

Ingredients for Soup

  • 1 onion, diced
  • 4 jalapenos, seeds removed and diced
  • 6 pieces bacon, cut into pieces
  • 2 Tablespoons butter
  • 3 (15.5 ounces) cans great northern beans, drained and rinsed
  • 2 cups shredded chicken
  • 14.5 ounces chicken broth
  • 1 ½ teaspoon garlic powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • 1 teaspoon oregano
  • 8 ounces cream cheese
  • 3 Tablespoons cilantro, chopped
  • 1 cup heavy cream, straight from the carton

Toppings for Chili

  • Sour cream
  • Corn chips
  • Grated cheese

Instructions

  1. Prepare the base: Set the Instant Pot to the Sauté function and melt the butter in the pan. Add diced onions, jalapenos, and bacon pieces, cooking until the onions are softened and the bacon is cooked through.
  2. Add main ingredients: Stir in the drained beans, shredded chicken, chicken broth, garlic powder, salt, cumin, and oregano. If using raw boneless, skinless chicken breasts, add them now; they will cook during pressure cooking and can be shredded afterward.
  3. Pressure cook: Seal the Instant Pot lid and set it to high pressure for 10 minutes. Ensure the valve is closed. Once cooking is complete, perform a quick release to let out the steam safely.
  4. Incorporate cream cheese: Open the lid and add the cream cheese. Replace the lid and let the soup sit for about 10 minutes to allow the cream cheese to soften for easy stirring.
  5. Finish the soup: Stir the softened cream cheese thoroughly into the soup, then add the heavy cream and stir to combine.
  6. Serve: Ladle the soup into bowls and top with sour cream, corn chips, and grated cheese as desired for added texture and flavor.

Notes

  • For a slow cooker version, refer to the original recipe post for detailed instructions.
  • For a spicier soup, leave the jalapeno seeds in. For a milder flavor, substitute with mild canned green chilis.
