Ingredients

Vegetables

  • 16 ounces (453.59 g) broccoli, coarsely chopped
  • 4 cloves garlic, minced

Dairy

  • 2 tbsp (28.4 g) butter, divided
  • 3/4 cup (177.44 ml) heavy whipping cream
  • 1 1/3 cups (149.33 g) shredded mozzarella, divided
  • 1/3 cup (33.33 g) grated parmesan cheese

Protein

  • 1 1/2 lb (680.39 g) cooked, chopped chicken (about 4 cups)

Seasonings

  • Salt and pepper, to taste

Instructions

  1. Sauté Broccoli: Set a 10-inch ovenproof skillet over medium heat and add 1 tablespoon of butter. Once melted, add the coarsely chopped broccoli and sauté until it becomes bright green and just tender, about 4 minutes. Remove the broccoli to a separate bowl to keep aside.
  2. Make Cheese Sauce: In the same skillet, melt the remaining 1 tablespoon of butter. Add the minced garlic and cook until fragrant, approximately 1 minute. Pour in the heavy whipping cream and bring to a gentle simmer. Let it cook for 3 to 5 minutes until reduced and thickened.
  3. Incorporate Cheese and Seasonings: Stir in 1/3 cup of shredded mozzarella and all of the grated parmesan cheese into the cream sauce until melted and smooth. Season the sauce with salt and pepper according to your taste preferences.
  4. Combine Ingredients: Return the sautéed broccoli to the skillet, then add the cooked, chopped chicken. Mix everything evenly to combine the flavors. Evenly top the mixture with the remaining 1 cup of shredded mozzarella cheese.
  5. Broil the Casserole: Preheat your oven's broiler. Place the skillet approximately 6 inches from the heat source and broil until the cheese begins to brown and bubble, about 2 to 5 minutes depending on your broiler’s intensity. Watch carefully to prevent burning.

Notes

  • Storage Information: Store the casserole in a covered container or tightly wrapped in the refrigerator for up to 5 days.
  • Use an ovenproof skillet to make the recipe easier by cooking and broiling in the same pan.
  • You can substitute mozzarella with other shredded cheeses like cheddar or Monterey Jack for different flavor profiles.
  • Ensure the chicken is pre-cooked before adding to reduce overall cook time.
