Ingredients

Donut Bites:

  • 1/3 cup (76.67 g) sour cream
  • 2 large eggs
  • 1 tbsp water
  • 1/2 tsp vanilla extract
  • 1/3 cup (63.33 g) granular sweetener
  • 1 2/3 cup almond flour
  • 1/4 cup (27 g) unflavoured whey protein powder
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt

Glaze:

  • 1/3 cup (63.33 g) powdered sweetener
  • 1 tbsp (15.22 g) heavy cream
  • Water (to thin, about 2-4 tbsp)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350ºF (177ºC) and line a 24-cavity mini muffin pan with parchment or silicone liners to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, whisk together the sour cream, eggs, water, and vanilla extract until fully combined to create a smooth base for the batter.
  3. Add Sweetener and Dry Ingredients: Stir in the granular sweetener thoroughly, then fold in the almond flour, unflavored whey protein powder, baking powder, and salt. If the batter feels too thick, add a little more water gradually until it reaches a scoopable consistency.
  4. Portion Batter: Divide the batter evenly among the prepared mini muffin cups, filling each about three-quarters full to allow for rising during baking.
  5. Bake Donut Bites: Bake the batter in the preheated oven for 15 to 20 minutes, or until the donut bites turn golden brown and are firm to the touch. Remove from oven and let them cool completely in the pan.
  6. Prepare Glaze: In a medium bowl, whisk together the powdered sweetener and heavy cream. Start by adding 2 to 3 tablespoons of water and mix. Continue adding water gradually until the glaze reaches a thin, dip-like consistency.
  7. Glaze Donut Bites: Dip the tops of each cooled donut bite into the prepared glaze, then place them on a waxed paper-lined baking sheet to allow the glaze to set.

Notes

  • Using parchment or silicone liners helps to remove the donut bites easily without breaking them.
  • You can adjust sweetness by using your preferred granulated or powdered sweetener suitable for keto diets.
  • Make sure donut bites are completely cooled before glazing to prevent the glaze from melting off.
  • The glaze consistency can be adjusted with water to make it thinner or thicker depending on preference.
  • Store in an airtight container in the refrigerator for up to 4 days for best freshness.
