Ingredients

Beef and Base

  • 1 1/2 lb (680.39 g) ground beef
  • 2 tbsp olive oil

Vegetables and Aromatics

  • 2 ribs celery, chopped
  • 1/4 cup (40 g) chopped onion
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • Salt and pepper, to taste
  • 1 small (118 g) zucchini, chopped
  • 6 ounce (170.1 g) green beans, chopped
  • 8 ounces (226.8 g) cauliflower florets, cut into 1 inch pieces

Broth and Tomato Ingredients

  • 4 cups (946.35 ml) beef broth
  • 2/3 cup (99.33 g) diced tomatoes
  • 1 tbsp tomato paste

Instructions

  1. Brown the Beef: In a large soup pot or dutch oven, brown the ground beef until mostly cooked through, breaking up clumps with a wooden spoon. Once browned, transfer the beef to a bowl and set aside.
  2. Sauté Vegetables: Heat the olive oil in the same pot. Add the chopped celery and onion, sautéing them until softened, about 3 minutes. Then add the minced garlic and red pepper flakes, seasoning with salt and pepper. Cook for another minute to release the aromas.
  3. Add Fresh Veggies: Stir in the chopped green beans and zucchini, tossing to combine with the aromatics. Cook for 3 to 4 minutes until the vegetables start to soften.
  4. Add Broth and Tomato: Pour in the beef broth, diced tomatoes, and tomato paste. Bring the mixture to a gentle simmer. Then add the cauliflower florets and cook for 5 to 7 minutes until the cauliflower becomes just tender.
  5. Combine Beef and Heat Through: Return the browned beef back to the pot and stir well. Cook for another 1 to 2 minutes until everything is heated through and flavors meld.
  6. Season and Serve: Taste the soup and adjust the salt and pepper as needed. Serve hot and enjoy your comforting keto minestrone!
