Ingredients

Wet Ingredients

  • 2 large eggs
  • 2 large egg whites (can use cartoned egg whites)
  • 1/2 cup (118.29 ml) unsweetened almond milk (or another low carb milk)
  • 1/4 cup (59.15 ml) avocado oil
  • 1 tsp vanilla extract

Dry Ingredients

  • 1¾ cup (196 g) almond flour
  • 1/3 cup (36 g) unflavored whey protein powder
  • 1/4 cup (45.5 g) Swerve Granular
  • 2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Prepare the batter: In a large bowl, whisk together the eggs, egg whites, almond milk, avocado oil, and vanilla extract until well combined and smooth.
  2. Add dry ingredients: Add almond flour, sweetener, whey protein powder, baking powder, and salt to the wet mixture. Whisk thoroughly until the batter is smooth and homogenous. Let the batter rest for 5 minutes to thicken slightly.
  3. Preheat and grease waffle iron: Preheat your waffle iron and lightly grease it to prevent sticking. For mini waffles, measure about 1/4 cup of batter per section; for classic round waffles, use about 1/3 cup per waffle.
  4. Cook waffles: Pour the batter onto the waffle iron, close the lid, and cook until the waffles are puffed up and golden brown on both sides. Cooking time varies depending on your waffle iron model.
  5. Crisp up waffles (optional): For extra crispiness, place cooked waffles on a wire rack in a warm oven at 200ºF for 10 minutes before serving.

Notes

  • Storage: Store waffles in a covered container at room temperature for up to 4 days or refrigerate for up to 1 week. They also freeze well for several months.
  • Reheating: Reheat waffles in a 300ºF oven until thoroughly warmed to restore crispiness.
