Ingredients

Espresso Martini Jelly Layer

  • 1 1/2 tablespoons cold water
  • 2 1/4 teaspoons unflavored powdered gelatin (1 envelope)
  • 1/2 cup light brown sugar, firmly packed
  • 3/4 cup hot brewed espresso
  • 1/2 cup vodka or water

Espresso Chocolate Mousse Layer

  • 2 tablespoons espresso powder
  • 2 tablespoons hot water
  • 1 1/2 cups heavy cream, divided
  • 6 oz. semisweet chocolate, finely chopped (about 3/4 cup)

Whipped Cream and Toppings

  • 3/4 cup heavy whipping cream
  • 12 roasted coffee beans
  • Espresso powder for sprinkling
  • 4 leaf tuile cookies (see recipe notes)

Leaf Tuiles (optional)

  • 3 egg whites (carton egg whites acceptable if pure)
  • 1 cup confectioners’ sugar
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 4 tablespoons unsalted butter, melted
  • Gel food color (Wilton marron brown), about 1/4 teaspoon

Instructions

  1. Prepare espresso martini jelly layer: Arrange four 8 oz. coupe or martini glasses on a tray or baking sheet. In a small cup, sprinkle the gelatin over 1 1/2 tablespoons cold water and let bloom for about 2 minutes. In a large microwave-safe bowl, dissolve 1/2 cup packed light brown sugar in 3/4 cup hot brewed espresso, microwaving for 1 minute if needed. Stir in the bloomed gelatin until fully melted, then add 1/2 cup vodka or water. Divide evenly among glasses and refrigerate for about 3 hours until the jelly is firm.
  2. Make espresso chocolate mousse layer: Combine 2 tablespoons espresso powder with 2 tablespoons hot water until dissolved. In a microwave-safe bowl, heat 3/4 cup heavy cream and 6 oz. chopped semisweet chocolate for 1 minute at full power; let stand 1 minute, then whisk until smooth ganache forms. Stir in espresso mixture and allow to cool almost completely (about 10-15 minutes). Whip remaining 3/4 cup heavy cream to stiff peaks and gently fold the ganache into the whipped cream until smooth with no white streaks. Evenly layer the mousse over the set jelly in each glass, smoothing edges with a spoon or piping bag.
  3. Whip cream and garnish: Whip 3/4 cup heavy whipping cream until soft peaks form and top each mousse glass generously, filling to the brim. Garnish each with three whole roasted coffee beans arranged in the center. Lightly sprinkle espresso powder or unsweetened cocoa powder over the whipped cream. Place a leaf tuile cookie on the rim of each glass just before serving.
  4. Optional leaf tuiles preparation: Whisk 3 egg whites and 1 cup confectioners’ sugar with a hand mixer until smooth. Incorporate 3/4 cup flour gently, then fold in 1/2 teaspoon vanilla extract and 4 tablespoons melted butter. Cover and refrigerate 30 minutes. Mix in about 1/4 teaspoon brown gel food color. Preheat oven to 400°F. Spray a leaf motif tuile mold and spread batter evenly using an offset spatula. Bake for 3-5 minutes until puffed. Immediately remove, gently lift tuiles with a toothpick, and drape over a rolling pin to cool into shape. Store in airtight container up to 5 days.

Notes

  • If you don’t have an espresso machine, alternatives include using a moka pot, espresso powder dissolved in hot water, French press with finer grind and longer steep, or Aeropress using the inverted method repeated for volume.
  • Alcohol can be omitted and replaced with equal amount of water in the jelly layer.
  • Leaf tuiles add a decorative and textural element but are optional; store in an airtight container up to 5 days.
  • Use freshly brewed espresso for best flavor depth but substitutes work well in a pinch.
