Ingredients

Chocolate Mixture

  • 10 tablespoons (140 g) unsalted butter
  • 2/3 cup + 1/4 cup (156 g) semi-sweet chocolate chips
  • 1/4 cup (25 g) dark cocoa powder

Wet Ingredients

  • 1/2 cup (100 g) dark brown sugar, packed
  • 1/2 cup (100 g) granulated sugar
  • 2 large eggs (100 g total)
  • 1 large egg yolk (18 g)
  • 1 tablespoon vanilla extract

Dry Ingredients

  • 2/3 cup + 1 tablespoon (90 g) all-purpose flour
  • 1 teaspoon espresso powder
  • 1/2 teaspoon salt

Add-ins and Topping

  • 3/4 cup (160 g) M&M's
  • 1/3 cup (55 g) chopped semi-sweet chocolate bar or chocolate chips

Instructions

  1. Prepare the Pan and Oven. Line an 8×8 inch square metal baking pan completely with parchment paper, covering all four sides for easy removal later. Preheat your oven to 350°F (180°C).
  2. Melt Butter and Chocolate. In a heatproof bowl, melt the butter together with the semi-sweet chocolate chips until smooth and fully combined. Whisk in the dark cocoa powder until the mixture is uniform and set aside.
  3. Combine Sugars and Eggs. In a separate bowl, whisk together the dark brown sugar, granulated sugar, whole eggs, egg yolk, and vanilla extract until light and creamy.
  4. Add Chocolate Mixture to Wet Ingredients. Slowly whisk the melted butter and chocolate mixture into the sugar and egg mixture until just combined.
  5. Fold in Dry Ingredients and Add-ins. Gently fold the flour, espresso powder, and salt into the batter until almost combined. Carefully fold in the M&M's and chopped chocolate, being careful to combine everything without overmixing.
  6. Pour and Decorate. Transfer the brownie batter into the prepared pan, smoothing the top evenly. Sprinkle additional M&M's on top for extra crunch and color.
  7. Bake. Bake in the preheated oven for 33 to 40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs clinging to it.
  8. Cool and Serve. Allow the brownies to cool completely in the pan set on a wire rack. When cool, use the parchment paper to lift the brownies out of the pan. Cut into 16 squares and enjoy!
  9. Storage. Store leftover brownies in an airtight container at room temperature for up to 2-3 days to keep them fresh.

Notes

  • Line the baking pan with parchment paper so the brownies can be lifted out easily and you don’t have to scrape them out.
  • Be careful when folding the flour and mix-ins so as not to overwork the batter to keep brownies fudgy.
  • Measuring flour correctly is key: spoon flour into the measuring cup and level off with a knife for accurate measurement.
  • Oven baking times may vary, so check with a toothpick around 33 minutes to avoid overbaking.
  • Using espresso powder enhances the chocolate flavor but can be omitted if unavailable.
