Ingredients

Blondies

  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup butter (softened)
  • 1/4 cup sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

Apple Filling

  • 2 large apples (chopped finely)
  • 2 Tbsp brown sugar
  • 1 Tbsp butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

Maple Glaze

  • 2 Tbsp butter
  • 1/4 cup pure maple syrup
  • 1/2 cup powdered sugar
  • 1/4 tsp vanilla extract
  • 1/8 tsp ground cinnamon

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C) and line an 11x7 inch pan with tin foil or spray it with cooking spray to prevent sticking.
  2. Cook apple filling: On medium-low heat, cook the chopped apples with 2 Tbsp brown sugar, 1 Tbsp butter, 1/2 tsp vanilla extract, and 1/2 tsp cinnamon for 3-4 minutes until apples soften. Remove from heat and allow to cool.
  3. Cream butter and sugars: In a mixing bowl, cream 1 cup softened butter until light and fluffy, about 1 minute. Add 1/4 cup sugar and 1 cup dark brown sugar and mix until well combined.
  4. Add eggs and vanilla: Add 2 large eggs one at a time, beating well after each addition to ensure incorporation. Then add 1 1/2 tsp vanilla extract and 1/2 tsp salt, mixing until combined.
  5. Combine dry ingredients: In a separate bowl, whisk together 2 cups all purpose flour, 1 tsp baking powder, and 1/2 tsp cinnamon. Gradually add this dry mixture to the wet ingredients and stir until just combined.
  6. Assemble blondie layers: Spread half of the blondie batter evenly into the prepared pan using a spatula or your hands (the batter is thick). Evenly spread the cooled apple filling over the batter layer, then top with the remaining blondie batter, spreading it evenly.
  7. Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and a toothpick or cake tester inserted into the center comes out clean.
  8. Make maple glaze: While the blondies bake, melt 2 Tbsp butter, 1/4 cup pure maple syrup, 1/4 tsp vanilla extract, and 1/8 tsp ground cinnamon over low heat. Remove from heat, sift in 1/2 cup powdered sugar, and whisk until smooth. Let the glaze cool for 8-10 minutes to thicken.
  9. Finish and serve: Once the blondies have cooled about 10 minutes in the pan, pour the maple glaze evenly over the top and allow it to set. Slice into squares and enjoy!

Notes

  • Use firm apples like Granny Smith or Honeycrisp for best texture in the filling.
  • Line the pan with foil for easy removal and clean-up.
  • Allow blondies to cool before slicing to ensure clean cuts.
  • Maple glaze can be refrigerated and gently reheated if needed.
  • For a nuttier flavor, consider adding chopped walnuts or pecans to the blondie batter.
