Ingredients

Dry Ingredients

  • 150g T55 flour
  • 1 sachet of baking powder
  • Salt, pepper, and oregano to taste

Wet Ingredients

  • 4 fresh eggs
  • 10 cl milk
  • 1 tablespoon olive oil

Additional Ingredients

  • 100g grated cheese (Gruyère or Emmental)
  • 100g roast pork (approximately 3 thick slices, cubed)
  • 30g sun-dried tomatoes (diced)
  • 30g green olives (about 10, halved)
  • 30g fresh button mushrooms (finely sliced)

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (356°F) to prepare for baking the cake.
  2. Prepare Ingredients: Cut the roast pork into approximately 1 cm cubes. Clean and finely slice the button mushrooms. Halve the green olives and dice the sun-dried tomatoes into medium-sized pieces.
  3. Mix Wet Ingredients: In a large bowl, beat the eggs vigorously with the milk and olive oil until well combined and slightly frothy.
  4. Sift Dry Ingredients: Sift the flour together with the baking powder to ensure no lumps and even distribution.
  5. Combine Batter: Gradually add the sifted flour mixture into the wet ingredients while whisking continuously to create a smooth batter.
  6. Add Flavorings and Mix-ins: Stir in the grated cheese followed by all the chopped ingredients—roast pork, mushrooms, olives, and sun-dried tomatoes. Season the mixture with salt, pepper, and oregano according to your taste.
  7. Prepare Baking Tin: Line your cake tin with parchment paper to prevent sticking and make unmolding easier.
  8. Pour and Smooth Batter: Pour the prepared batter into the lined cake tin and smooth the surface using a spatula or back of a spoon.
  9. Bake: Place the cake tin in the preheated oven and bake for approximately 45 minutes. Keep an eye on the crust color during baking.
  10. Check Doneness: Test if the cake is cooked through by inserting a knife blade into the center; it should come out clean and dry.
  11. Cool: Remove the cake from the oven and allow it to cool for at least 10 minutes before unmolding to maintain its structure and ease cutting.

Notes

  • Use Gruyère or Emmental cheese for authentic flavor, but other semi-hard cheeses can be substituted.
  • Ensure all ingredients like pork and vegetables are cut uniformly for even distribution in the cake.
  • This savory cake is best served slightly warm or at room temperature.
  • Leftovers can be refrigerated for up to 3 days and reheated gently before serving.
  • Feel free to add herbs such as thyme or rosemary to enhance the Mediterranean flavor.
