Ingredients

Chicken Fajita Topping

  • 1 lb chicken tenders, cubed
  • 1 small or ½ large yellow onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 tbsp olive oil + more for frying
  • 1-2 teaspoon salt
  • 1 ½ tsp cayenne pepper
  • 1 ½ tsp paprika
  • 1 tsp chili flakes
  • 2 tsp garlic powder
  • Juice of ½ lemon

Assembly

  • ¾ cup pizza sauce
  • 2 cups shredded cheese (Mozzarella and Mexican Blend mix recommended)
  • 12 King's Hawaiian Original Hawaiian Slider Buns, separated into 24 halves

Instructions

  1. Prepare Chicken Fajita Topping: In a mixing bowl, combine the cubed chicken tenders, thinly sliced onion, green and yellow bell peppers with 2 tablespoons of olive oil and all the seasonings: salt, cayenne, paprika, chili flakes, and garlic powder. Toss everything together to coat the ingredients evenly.
  2. Cook the Fajita Mixture: Heat additional olive oil in a large frying pan over medium-high heat. Add the seasoned chicken and vegetable mixture and sauté for about 10 minutes until the chicken is fully cooked and the vegetables are slightly charred and caramelized. Adjust seasoning to taste and finish by stirring in the lemon juice.
  3. Preheat Oven and Toast Buns: Preheat your oven to 350°F (175°C). Arrange the separated slider bun halves on a light-colored large baking sheet. Bake for 5 minutes to lightly toast the buns.
  4. Assemble Mini Pizzas: Increase the oven temperature to 400°F (205°C). Spread a small amount of pizza sauce on each toasted bun half to avoid sogginess, then sprinkle with shredded cheese. Top each pizza with the prepared chicken fajita topping. Optionally, garnish with thinly sliced bell peppers for extra decoration.
  5. Bake the Mini Pizzas: Return the baking sheet to the oven and bake for a few minutes—just until the cheese melts. Keep an eye to prevent burning, especially on the bottoms of the buns.
  6. Serve: Optionally, sprinkle with parmesan cheese before serving. Serve warm and enjoy your flavorful mini chicken fajita pizzas!

Notes

  • The chicken fajita topping makes a little extra, which can be saved for tacos, quesadillas, or sandwiches.
  • Use a light-colored baking sheet to prevent the buns from burning on the bottom.
  • Avoid adding too much pizza sauce on the buns to keep the pizzas from becoming soggy.
  • Optional garnishes like thinly sliced bell peppers and parmesan cheese can enhance the pizzas' flavor and presentation.
