Ingredients

Gnocchi and Vegetables

  • 1 package gnocchi (16 oz)
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 zucchini, sliced

Seasonings and Garnish

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil: Warm 2 tablespoons of olive oil in a large skillet over medium heat, preparing the pan for sautéing the vegetables.
  2. Sauté the vegetables: Add 1 cup halved cherry tomatoes, 1 diced bell pepper, and 1 sliced zucchini to the skillet. Cook for 5-7 minutes until the vegetables soften and begin to caramelize.
  3. Add garlic and seasoning: Stir in 2 minced garlic cloves and 1 teaspoon of Italian seasoning, cooking for about 1 minute to release their flavors without burning.
  4. Cook the gnocchi: Add the entire 16 oz package of gnocchi to the skillet. Stir well to combine with the vegetables and season with salt and pepper to taste. Cook according to package instructions, usually about 3-5 minutes, until the gnocchi is golden and cooked through.
  5. Garnish and serve: Remove from heat and sprinkle fresh basil leaves over the top for a fragrant and colorful finish. Serve immediately for the best flavor and texture.

Notes

  • Use fresh gnocchi from the refrigerated section for best texture, but frozen gnocchi can be used - just add a couple extra minutes to cooking time.
  • Feel free to swap in other vegetables like mushrooms or spinach based on your preference.
  • For a vegan option, ensure the gnocchi used does not contain eggs or dairy.
  • To add protein, consider topping with grated Parmesan or adding cooked legumes on the side.
  • Leftovers store well in an airtight container in the refrigerator for up to 2 days; reheat gently in a pan or microwave.
