Ingredients

Meat and Vegetables

  • 1 pound ground beef (extra lean)
  • 1 small onion, chopped
  • 3 cloves garlic, minced

Seasonings and Sauces

  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)
  • 1 tablespoon Italian seasoning
  • 2 cups marinara sauce

Pasta and Liquids

  • 8 ounces mafalda pasta (uncooked)
  • 3 cups chicken broth (low sodium)

Cheese and Garnish

  • 1 cup mozzarella cheese (shredded)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Cook the beef. In a large skillet, cook the ground beef over medium heat until it's no longer pink and starts to brown. Drain off any excess fat if needed. Using extra lean ground beef may reduce the amount of fat to drain.
  2. Incorporate onion, garlic and seasoning. Add the chopped onion and minced garlic to the skillet with the beef and stir to combine. Season with salt, pepper, and Italian seasoning. Cook until the onion becomes soft and translucent, about 3 minutes.
  3. Add liquids and pasta. Pour in the marinara sauce, uncooked mafalda pasta, and chicken broth. Stir everything together well. Bring the mixture to a boil over medium-high heat, then reduce the heat to low. Cover and simmer for about 15 minutes, or until the pasta is tender and most of the sauce is absorbed, stirring occasionally.
  4. Finish the dish. Stir in the shredded mozzarella cheese and cook for an additional 30 seconds to 1 minute, or until the cheese is fully melted and incorporated into the dish.
  5. Garnish and serve. Remove from heat, sprinkle chopped fresh parsley on top for garnish, and serve warm.

Notes

  • If mafalda pasta is unavailable, substitute with other small pasta shapes like farfalle, penne, shells, or elbow macaroni.
  • Ground chicken or turkey can be used instead of beef to reduce fat content.
  • When adding the liquids, scrape the brown bits from the bottom of the skillet for extra flavor.
  • Feel free to customize with different cheeses, spices, or herbs to make the dish your own.
  • Leftovers are great for lunch the next day—reheat after bringing to room temperature. Store leftovers in an airtight container in the refrigerator for 3 to 4 days.
  • You can freeze leftovers by cooling completely and storing in an airtight container. They remain fresh for up to 3 months in the freezer.
