Ingredients

Main Ingredients

  • 3/4 cup (157.5 g) cottage cheese, whole milk
  • 2 large egg whites
  • 1 cup (112 g) almond flour
  • 1/3 cup (36 g) unflavored whey protein powder
  • 2 tbsp (14.2 g) coconut flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tbsp butter, melted
  • 1 tbsp Everything Bagel Seasoning

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350ºF (175ºC) and line a baking sheet with a silicone mat to prevent sticking and for easy cleanup.
  2. Blend Cottage Cheese: Place the cottage cheese in a blender and blend until smooth to ensure a creamy texture in the dough. Transfer the smooth cottage cheese to a large mixing bowl.
  3. Combine Egg Whites: Whisk the 2 large egg whites into the blended cottage cheese until well combined, helping to bind the dough.
  4. Add Dry Ingredients: Add the almond flour, unflavored whey protein powder, coconut flour, baking powder, and salt to the bowl. Use a rubber spatula to thoroughly mix and work these ingredients together until a dough forms.
  5. Form Bagels: Wet or oil your hands to prevent sticking and form the dough into 6 large balls. You may need to re-wet your hands between forming each ball. Place the balls on the prepared baking sheet and press down with your palm to about 1 1/2 inches thick to shape the bagels.
  6. Create Holes: Dip the end of a wooden spoon into water and press it into the center of each dough mound. Move the spoon in small circles to enlarge the hole, giving each bagel its classic shape.
  7. Add Toppings: Brush the tops of the bagels with melted butter to enhance flavor and moisture, then sprinkle with everything bagel seasoning for extra flavor and texture.
  8. Bake: Bake the bagels in the preheated oven for 18 to 22 minutes, or until they are puffed, just beginning to brown, and firm to the touch.
  9. Cool Before Serving: Remove the bagels from the oven and let them cool completely on a wire rack before slicing and serving to allow them to set properly.

Notes

  • Storage: Store the bagels in a covered container at room temperature for up to 3 days or refrigerate for up to a week.
  • Freezing: Bagels can be frozen for several months. Thaw completely before slicing and reheating.
  • Customization: Feel free to experiment with different seasonings or toppings to suit your taste preferences.
