Ingredients

Buttercream Base

  • 1/2 cup (1 stick) unsalted butter
  • 4 oz (1/2 package) cream cheese

Sweeteners and Flavorings

  • 3 1/2 cups powdered sugar
  • 3 Tablespoons raspberry jam (preferably pure fruit, no additional sugar)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt (only if using unsalted butter)

Finishing Touches

  • 1 Tablespoon milk or cream
  • Pink food coloring (optional)

Instructions

  1. Beat Butter: In the bowl of an electric mixer, beat the unsalted butter until it is smooth and creamy, providing a fluffy base for the frosting.
  2. Add Cream Cheese: Add the cream cheese to the butter and continue beating until fully combined and the mixture is smooth.
  3. Incorporate Powdered Sugar and Jam - First Addition: Add 1 cup of powdered sugar and blend well. Then add 1 tablespoon of raspberry jam and mix thoroughly to combine.
  4. Add Vanilla and Salt: Mix in the vanilla extract. Add 1/4 teaspoon salt only if unsalted butter was used to balance the flavors.
  5. Add More Powdered Sugar and Jam - Second Addition: Add another cup of powdered sugar and 1 tablespoon of raspberry jam, blending well between additions.
  6. Final Powdered Sugar and Jam Addition: Add the final 1 1/2 cups of powdered sugar and the remaining 1 tablespoon of raspberry jam. Beat until the frosting is smooth, fluffy, and well blended.
  7. Add Milk or Cream: Slowly pour in 1 tablespoon of milk or cream, continuing to beat for 20 seconds to achieve the desired consistency.
  8. Add Food Coloring (Optional): If desired, add a drop of concentrated pink food coloring or red liquid food color to give the frosting a pretty pink hue, mixing until uniform.
  9. Apply Frosting: Spread the frosting onto cake layers using an offset spatula or pipe it with a large piping bag fitted with a large round tip for decorative effect.

Notes

  • If you have a strong aversion to cream cheese, you can replace it with an additional 1/2 cup (1 stick) of butter for a butter-only frosting.
  • This recipe yields enough frosting to generously cover just between the cake layers, not for full exterior coverage.
  • Use pure fruit raspberry jam without added sugar to keep the frosting from becoming too sweet.
  • Adjust the amount of milk or cream as needed to get your preferred frosting consistency.
