Ingredients

Ingredients

  • 1/3 cup pine nuts
  • 1 cup tightly packed fresh basil leaves
  • 3/4 cup freshly grated parmesan cheese
  • 2-3 cloves garlic, minced
  • Salt and pepper to taste
  • 1/3 cup olive oil

Instructions

  1. Toast Pine Nuts: If you prefer toasted pine nuts for a deeper flavor, add them to a skillet over medium-high heat. Watch carefully and toss frequently. After a few minutes, the pine nuts will turn lightly golden and browned on both sides. This process takes about 5-10 minutes. Remove from heat and let cool.
  2. Prepare Ingredients: Have your basil, garlic, parmesan cheese, and salt and pepper ready. Place them into the bowl of a food processor, leaving out the olive oil for now.
  3. Pulse and Combine: Pulse the food processor a few times to combine the ingredients roughly.
  4. Add Olive Oil: With the processor running on low speed, slowly drizzle in the olive oil. Stop occasionally to scrape down the sides of the bowl to ensure even mixing.
  5. Process Until Smooth: Continue processing until the mixture is smooth with no large pieces of pine nuts remaining. Adjust texture by processing more or less depending on your preference.
  6. Taste and Adjust Seasoning: Taste the pesto and add salt, pepper, or additional garlic if desired to suit your preference.
  7. Store: Transfer the finished pesto to a jar or airtight container and refrigerate. It will keep fresh for up to one week.

Notes

  • Customize your pesto by adding extra garlic for more pungency.
  • Add more olive oil if you prefer a looser sauce.
  • For a spicy kick, add red pepper flakes to taste.
  • Use fresh, high-quality basil and parmesan cheese for the best flavor.
  • Pine nuts can be substituted with walnuts or almonds if preferred.
