Ingredients

Duck and Seasoning

  • 1 duck (5 lbs or more), thawed
  • 1+ tsp salt
  • ¼ tsp pepper
  • 1 tsp paprika
  • 1 large navel orange
  • 1 tsp garlic powder
  • 1 tbsp dry parsley
  • 6 cloves garlic, peeled

Vegetables and Liquid

  • 1 cup Marsala wine
  • Bell peppers (quantity as desired)
  • Potatoes (quantity as desired, sliced)
  • Portabella mushrooms (quantity as desired, sliced)

Instructions

  1. Prepare the Duck: Completely defrost the duck in the refrigerator for a couple of days. Remove the giblets from inside the duck, then rinse the duck and giblets thoroughly. Pat the duck dry with paper towels. Trim any excess fat and skin from the duck for a neater presentation and better roasting.
  2. Tie and Prick the Skin: Use butcher’s twine to tie the drumsticks together to maintain shape while cooking. Prick the duck's skin all over with a sharp paring knife, being careful not to pierce the meat, to allow fat to render out during roasting and to crisp the skin.
  3. Season and Prepare the Cavity: Grate the orange zest over the duck, rub it evenly on the skin, then squeeze orange juice on top. Place the squeezed orange halves along with about 5-6 peeled garlic cloves inside the duck’s cavity. Generously season the duck inside and out with salt, pepper, paprika, garlic powder, and dry parsley, adjusting salt and pepper to taste.
  4. Add Wine to Baking Dish: Pour one cup of Marsala wine into the bottom of your baking dish. This will add moisture and flavor during roasting.
  5. Initial Roasting: Preheat the oven to 375°F (190°C). Place the duck breast side up in the baking dish and roast for 1 hour. This step begins the cooking process and helps the skin start crisping.
  6. Add Vegetables and Flip Duck: Carefully remove the duck to a plate using tongs or turkey lifters. Add sliced potatoes, bell peppers, and mushrooms around the base in the baking dish. Flip the duck over so it rests on its back atop the vegetables. Baste the duck with juices from the pan, then dust lightly with salt, pepper, and dry parsley. Return to the oven at 375°F and roast for 30 minutes.
  7. Second Flip and Roast: Remove the duck again and flip the vegetables to ensure even cooking. Place the duck breast side up on top of the vegetables once more. Baste with pan juices again. During the final 30 minutes of roasting, cover parts of the duck that tend to burn easily with foil if desired.
  8. Final Roast and Check Temperature: Continue roasting for about 30 minutes or until the internal temperature at the thickest part of the leg and thigh joint reaches 170°F (77°C) to ensure doneness without overcooking.
  9. Rest and Serve: Remove the duck from the oven and transfer to a cutting board. Let it rest for 15 minutes to allow juices to redistribute. Remove the orange from the cavity and discard. Carve the duck and serve alongside the roasted vegetables.

Notes

  • During the last 30 minutes of baking, covering parts of the duck that easily get burned with foil helps prevent charring.
  • One 5-pound duck serves approximately 3 to 4 people due to relatively low meat yield compared to size.
