Ingredients

Potatoes

  • 1 pound little/baby potatoes, halved
  • 2 cups water

Sausage

  • 1 pound smoked sausage, sliced

Other Ingredients

  • 4 tablespoons olive or vegetable oil
  • 1/3 cup chicken broth
  • 2 tablespoons pesto (or more, to taste)

Instructions

  1. Boil Potatoes: Prep your potatoes by cutting them in half. Place them in a skillet with 2 cups of water over high heat. Boil the potatoes uncovered for about 10 minutes, stirring occasionally. If the water evaporates before 10 minutes, add a little more water to prevent burning.
  2. Drain and Sauté Potatoes: Drain the potatoes after boiling. Add 3 tablespoons of oil to the skillet and reduce heat to medium-high. Return potatoes to the pan and stir to coat with oil. Cook for approximately 10 minutes, stirring or flipping every few minutes to brown evenly. Adjust heat if pan gets too hot or smoky and add a splash of oil if pan dries out.
  3. Prepare Sausage: While potatoes cook, slice the smoked sausage if not already done.
  4. Cook Sausage: Transfer browned potatoes to a plate. Add remaining 1 tablespoon of oil to the skillet and cook sliced sausage over medium-high heat for about 5 minutes, stirring occasionally, until browned to your liking.
  5. Combine and Finish: Add chicken broth and pesto to the skillet with the sausage. Return the potatoes to the pan and stir until everything is well coated with the pesto mixture. The dish is not meant to have a lot of sauce—just a light coating for flavor.

Notes

  • If the water for boiling potatoes evaporates too quickly, add a little more to ensure even cooking.
  • Adjust the amount of pesto to suit your taste preference for a stronger or milder herb flavor.
  • Use olive oil for a richer flavor or vegetable oil for a neutral taste.
  • Cook sausage to your preferred level of browning; thicker slices may require slightly longer cooking times.
  • Use a cast iron skillet for best browning results, but monitor heat closely to prevent smoking.
