Ingredients

Caponata

  • 1 large eggplant cut into 1-inch cubes
  • ½ teaspoon fine salt divided, to taste
  • 4 tablespoons extra-virgin olive oil divided
  • 1 medium yellow onion chopped
  • 1 red bell pepper chopped
  • 2 celery stalks thinly sliced
  • Freshly ground black pepper to taste
  • 2 cloves garlic minced
  • 1 can (14 ounces) crushed tomatoes
  • ¼ cup pitted green olives (ideally Castelvetrano), roughly chopped
  • ¼ cup raisins
  • 3 tablespoons red wine vinegar
  • 2 tablespoons capers drained
  • 1 tablespoon honey
  • ¼ teaspoon red pepper flakes
  • 1 bay leaf
  • ¼ cup chopped fresh parsley

Grilled Swordfish

  • 1 lb. swordfish
  • 1 tablespoon olive oil
  • Salt to taste
  • Freshly ground black pepper to taste
  • Dried oregano to taste
  • 1 tablespoon lemon juice

Instructions

  1. Roast the Eggplant: Preheat the oven to 425°F. Line a large rimmed baking sheet with parchment paper and spread the cubed eggplant on it. Sprinkle with ¼ teaspoon salt, drizzle with 3 tablespoons olive oil, and toss to coat evenly. Roast for 30 to 35 minutes, stirring halfway through, until the eggplant is caramelized and golden.
  2. Sauté Vegetables: While the eggplant roasts, heat the remaining 1 tablespoon olive oil in a medium Dutch oven over medium heat. Add the chopped onion, red bell pepper, and celery, then season with the remaining ¼ teaspoon salt and freshly ground black pepper. Cook, stirring occasionally, until the vegetables become tender, about 10 minutes.
  3. Add Garlic and Tomatoes: Add the minced garlic to the vegetables and cook for about 30 seconds until fragrant. Stir in the crushed tomatoes to combine thoroughly.
  4. Finish Caponata Mixture: Add the chopped green olives, raisins, red wine vinegar, capers, honey, red pepper flakes, and bay leaf to the pot. Stir well and let the mixture simmer over medium-low heat for roughly 10 minutes, stirring occasionally to meld the flavors.
  5. Combine Roasted Eggplant: Remove and discard the bay leaf. Stir the roasted eggplant into the caponata and cook for another 2 to 3 minutes to warm through. Mix in the chopped fresh parsley, reserving a small amount for garnish. Remove the pot from the heat.
  6. Prepare the Grill and Swordfish: Preheat your grill to medium-high heat (about 400°F). Brush the swordfish steaks with olive oil and season both sides generously with salt, freshly ground black pepper, and dried oregano.
  7. Grill Swordfish: Place the swordfish on the grill and cook for 6 minutes per side, until the fish is opaque and has nice grill marks. Once cooked, remove from the grill and squeeze fresh lemon juice over the top.
  8. Serve: Plate the grilled swordfish and top generously with the warm Sicilian eggplant caponata. Garnish with reserved parsley and enjoy your flavorful Italian meal.

Notes

  • Adjust the tangy-sweet-spicy balance according to your taste by adding more vinegar, honey, red pepper flakes, salt, or pepper in small increments.
  • If Castelvetrano olives are not available, substitute with other green olives like Manzanilla or Halkidiki.
  • For a less sweet caponata, reduce or omit the raisins and honey.
  • Can be served warm or at room temperature; it's great as leftovers as flavors deepen over time.
  • Ensure the swordfish is fresh and thick-cut for optimal grilling results and flavor.
