Snow White Salad, also known as Snezhanka, is a creamy and refreshing Bulgarian dip similar to tzatziki. Made from thick strained yogurt combined with salty pickles, fresh dill, garlic, and finished with a drizzle of olive oil and optional crushed walnuts, it offers a probiotic-rich, protein-packed spread perfect for appetizers or snacks. Its bright flavors and creamy texture make it a versatile addition to any meal or party platter.

Ingredients

Ingredients

  • 1 tub plain yogurt, strained overnight in a cheesecloth so it thickens (725 grams)
  • Pinch of salt
  • 5 large diced dill pickles, or grated cucumber
  • ¼ cup dill, freshly chopped
  • 2 garlic cloves, minced
  • Drizzle of olive oil
  • Crushed walnuts, optional

Instructions

  1. Strain the yogurt: Place the plain yogurt in a cheesecloth, tie it securely, and allow it to drain overnight. You can hang the cheesecloth from the sink faucet to drain into the sink, or set it over a sieve above a bowl. This will thicken the yogurt to a creamy, cream cheese-like consistency. Alternatively, use thick Greek yogurt to skip this step.
  2. Prepare the mix: Transfer the thickened yogurt into a mixing bowl. Add a pinch of salt, diced dill pickles (or grated cucumber), freshly chopped dill, and minced garlic. Stir well until all ingredients are fully incorporated.
  3. Serve and garnish: Spoon the Snow White Salad into a serving bowl. Drizzle olive oil on top and sprinkle with crushed walnuts and optionally some green and red olives for extra flavor and texture.
  4. Storage: Store any leftovers in a sealed glass Tupperware container in the refrigerator. The salad will remain fresh for 5-7 days.

Notes

  • You can skip straining if using thick Greek yogurt, but the overnight drain enhances creaminess.
  • Pickles add tang and texture, but grated cucumber can be used for a milder flavor.
  • Adding crushed walnuts and a drizzle of olive oil on top adds flavor and texture contrast.
  • This dip pairs well with fresh bread, raw vegetables, or as a spread in sandwiches.
  • Keep refrigerated and consume within a week for best taste and safety.
