Ingredients

Puff Pastry

  • 1 sheet of puff pastry (thawed)

Filling

  • 2 cups fresh spinach (chopped)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 clove garlic (minced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)

Other

  • 1 egg (beaten for egg wash)
  • Olive oil (for sautéing)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for baking the puff pastry squares.
  2. Sauté the Spinach: Heat a drizzle of olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, then add the chopped spinach and cook until wilted. Remove from heat and set aside to cool slightly.
  3. Prepare the Filling: In a mixing bowl, combine the ricotta, mozzarella, Parmesan cheeses, sautéed spinach, salt, black pepper, and nutmeg if using. Mix thoroughly until well incorporated.
  4. Roll Out the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry sheet to smooth it, then cut into approximately 4x4 inch squares.
  5. Fill the Pastry Squares: Place a generous spoonful of the spinach and cheese filling in the center of each square, leaving a border around the edges.
  6. Seal the Squares: Fold the corners of the pastry over the filling to form a triangle or rectangle shape. Press edges firmly to seal and crimp with a fork for a decorative finish.
  7. Apply Egg Wash: Brush the tops of the filled pastry squares with the beaten egg to give a shiny, golden finish when baked.
  8. Bake: Arrange the filled squares on the prepared baking sheet and bake in the preheated oven for 25-30 minutes until puffed and golden brown.
  9. Cool Slightly: Remove from the oven and allow the squares to cool for a few minutes before serving, so the filling sets slightly.

Notes

  • For a crispier bottom, place the baking sheet on the lower rack in the oven.
  • You can substitute fresh spinach with frozen spinach; just thaw and squeeze out excess water before using.
  • Adding a pinch of nutmeg enhances the flavor but is optional.
  • Use cold puff pastry for best puff and texture.
  • Serve warm or at room temperature as an appetizer or snack.
