Ingredients

Fritter Mixture

  • 1 cup chopped frozen spinach, thawed
  • 1 cup whole milk ricotta
  • 1/2 cup almond flour
  • 1/3 cup finely grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 large egg

For Cooking

  • 1 tbsp melted butter or olive oil

Instructions

  1. Drain Spinach: Place the thawed spinach in a kitchen rag or tea towel and twist it tightly over the sink to squeeze out as much moisture as possible, ensuring your fritters hold together well.
  2. Mix Ingredients: In a large bowl, combine ricotta, almond flour, drained spinach, grated Parmesan, minced garlic, Italian seasoning, red pepper flakes (if using), salt, and pepper. Stir until evenly mixed.
  3. Add Egg: Incorporate the large egg into the mixture. Use a silicone spatula to blend everything thoroughly until the mixture resembles a dough-like consistency.
  4. Form Fritters: Using about 2 tablespoons of mixture each time, form into balls and then flatten them into patties. Aim to make at least 12 fritters.
  5. Preheat Air Fryer: Set your air fryer to 400ºF and lightly grease the air fryer racks to prevent sticking.
  6. Arrange and Brush: Place fritters in a single layer on the racks. Lightly brush the tops with melted butter or olive oil. If your air fryer is small, cook in batches.
  7. Air Fry: Cook the fritters for 10 minutes total, flipping them halfway through to ensure even browning. Brush the second side with butter or oil before flipping.
  8. Serve: Once golden and crispy, serve the fritters warm with marinara sauce or your favorite dipping sauce.

Notes

  • Stovetop Alternative: Heat 2 tablespoons of oil in a large non-stick pan over medium heat. Add the formed fritters, cooking until golden brown on one side, about 4-5 minutes. Flip carefully and cook the other side until browned. Drain on paper towels before serving.
  • For best results, make sure spinach is thoroughly drained to avoid soggy fritters.
  • These fritters freeze well—store cooked fritters in an airtight container and reheat in the air fryer or oven.
  • Adjust seasoning and heat level by varying Italian seasoning and red pepper flakes to taste.
