Ingredients

Rice and Egg

  • 150 g cooked Japanese short-grain rice, warm
  • 1 pasteurized egg, separated

Seasonings

  • 1 tsp Japanese soy sauce (koikuchi shoyu)
  • ¼ tsp oyster sauce
  • ⅛ tsp toasted sesame oil
  • ⅛ tsp dashi granules
  • ⅛ tsp sugar
  • 1 pinch salt (sea salt or kosher)

Garnish

  • Finely chopped green onions

Instructions

  1. Prepare the Rice: Start by measuring out 150 g of cooked Japanese short-grain rice. Ensure the rice is warm, not cold or stale, for the best texture.
  2. Separate the Egg: Carefully separate the yolk from the white of 1 pasteurized egg. The yolk will be reserved for topping later.
  3. Combine Egg White and Seasonings: Pour the egg white over the warm rice. Add 1 teaspoon of Japanese soy sauce, ¼ teaspoon oyster sauce, ⅛ teaspoon toasted sesame oil, ⅛ teaspoon dashi granules, ⅛ teaspoon sugar, and a pinch of salt to the rice and egg white mixture.
  4. Mix Thoroughly: Stir the mixture vigorously for 10-15 seconds until the rice grains are evenly coated and all ingredients are well combined, creating a creamy texture.
  5. Add Garnish and Egg Yolk: Create a bed of finely chopped green onions on top of the rice. Carefully place the separated egg yolk in the center of the onions.
  6. Final Mix and Serve: Just before eating, mix everything together thoroughly to incorporate the yolk and enjoy your Tamago Kake Gohan with any additional toppings you prefer.

Notes

  • Use pasteurized eggs to ensure safety when consuming raw eggs.
  • Warm rice is essential for the proper consistency of TKG; avoid using cold or refrigerated rice.
  • Adjust seasoning quantities to suit your taste preferences.
  • Optional toppings such as nori (seaweed), furikake, or pickled vegetables can enhance flavor and texture.
  • Mix the egg yolk in last to maintain its creamy texture until just before eating.
