Ingredients

Vinaigrette:

  • 1/4 cup olive oil
  • 1/4 cup fresh squeezed lemon juice
  • 1/4 cup rice vinegar
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon each fresh dill weed, oregano, basil, parsley, thyme (total about 5 teaspoons combined)
  • 1/2 teaspoon cilantro

Salad:

  • 4 large vine-ripened tomatoes
  • shaved Parmesan cheese, to taste (about 1/4 cup)

Instructions

  1. Prepare the Vinaigrette: Add all vinaigrette ingredients including olive oil, lemon juice, rice vinegar, balsamic vinegar, sugar, Kosher salt, black pepper, and fresh herbs into a mason jar. Secure the lid tightly and shake vigorously until the mixture is well emulsified and herbs are evenly distributed.
  2. Prepare the Tomatoes: Dice the large vine-ripened tomatoes into bite-sized pieces, removing excess seeds if desired for less juice. Place the diced tomatoes in a mixing bowl.
  3. Shave the Cheese: Using a vegetable peeler or cheese slicer, shave Parmesan cheese into thin flakes to garnish the salad.
  4. Toss the Salad: Pour the prepared vinaigrette over the diced tomatoes and gently toss to coat all pieces evenly with the herb dressing.
  5. Chill and Serve: Cover the salad and chill in the refrigerator for at least one hour to allow flavors to meld. Serve cold, topped with shaved Parmesan cheese for a delightful and fresh summer dish.

Notes

  • Using fresh herbs significantly enhances the flavor of the vinaigrette.
  • Chilling the salad allows the tomatoes to soak up the vinaigrette, enriching the overall taste.
  • Shaving Parmesan cheese rather than grating provides a nicer texture and presentation.
  • Adjust the amount of sugar in the vinaigrette to balance acidity according to your taste preference.
  • Remove tomato seeds if you prefer a less watery salad.
