Ingredients

Vegan Chicken

  • 4 Gardein Chick'n Scallopini
  • 4 slices Tofurky vegan ham
  • 2 slices Daiya vegan Swiss cheese, cut in half

Coating

  • 3 tablespoons vegan mayonnaise
  • 2 tablespoons Dijon mustard

Breading

  • 1 cup Just Egg
  • ½ cup Panko breadcrumbs
  • Oil spray for baking sheet

Sauce on the side

  • Vegan mayonnaise
  • Dijon mustard

Instructions

  1. Thaw Chick'n: Place Gardein Chick'n Scallopini in the fridge overnight to thaw completely.
  2. Preheat Oven: Preheat your oven to 370°F (188°C) to prepare for baking.
  3. Assemble Cordon Bleu: Take one chick'n scallopini piece, layer with a slice of vegan ham and half a slice of vegan Swiss cheese. Top with another chick'n scallopini piece to form a sandwich-like stack.
  4. Prepare Coating Mixture: In a small bowl, mix vegan mayonnaise and Dijon mustard together until smooth.
  5. Brush Coating: Using a brush, evenly coat both sides of each chick'n stack with the vegan mayo and mustard mixture to help the breading stick.
  6. Bread Chick'n: Dip each coated chicken stack gently into the Just Egg, coating both sides. Then, roll both sides in panko breadcrumbs until fully covered.
  7. Arrange for Baking: Place the breaded chick'n stacks onto a baking sheet. Secure with toothpicks if needed to prevent sliding. Lightly spray the tops with cooking oil for extra crispiness.
  8. Bake: Bake in the preheated oven for 20 minutes. Flip each piece carefully and bake for an additional 15 minutes or until the coating is golden brown and crispy.
  9. Serve: Remove from oven, allow to cool slightly to prevent burns. Serve hot topped with a side of vegan mayo and Dijon mustard sauce for dipping.

Notes

  • Use melty vegan cheese such as Daiya Swiss to ensure the oozy, delicious filling that mimics traditional cordon bleu.
  • For extra flavor, season the panko breadcrumbs with herbs and spices like dried oregano, Italian seasoning, onion powder, garlic powder, smoked paprika, or cayenne pepper for a mild heat.
  • For a crispier crust, pan-fry the breaded chick'n in a little oil on the stovetop until golden before baking in the oven.
  • Let the finished cordon bleu cool slightly before serving to avoid scalding from the hot filling.
